I've seen it, i've done it. That's why i am making you this guide.
When starting out in the game you get to start with a mare and a stud. Then you are like OMG those horses are so so pretty. But, you never pay half a mind to their ratings.
Ratings are what gets you big money here on HEE. Why? Because ratings breeders are willing to pay top dollar for good rated horses.
Ratings: (In order from Greatest to Least)
World Class: | W | So far World Class is newish to the game and was recently added because EEE's were getting to common and their values were going down.
Elite: | E | Elite is second best, and is still considered a high rating in the game.
Premium | P | Premium is third. In my opinion it is considered as good, but i only buy PPP+ mares to add to my stock, and hardly ever use PPP mares unless for broods for other players.
Superb | S | Motly breeders interested in color will allow this rating into their barns. As well as all the others below. If a colt rates Superb, then for most stables it is an automatic geld, as well as Premium colts. Horses with this and the below ratings are mostly owned by FR (free range) and color breeders. Or stables who have a Gelding Army (an barn full of geldings for showing.)

How do i breed good ratings?
Start buy getting rid of all horses below P, in all 3 disciplines. After that start buying PPP+ mares (ONLY mares, fillies) with good offspring. (PPP+). After that use studs from other members, such as, Jello, Brinley, ect, ect.
I recommend not keeping any colts un-gelded that are below PEE. It is just not worth it because not many players will breed to them. To be honest just breed to others studs, until you breed a WEE+ stud.
