Ok, so this is probably a stupid question XD, but what exactly happens with rollovers. I've seen them mentioned, but I don't know what they are. An explanation would be highly appreciated. Thanks!

Rollover is the beginning of a new game year. All horses age a year, and horses that have been bred out for the year are ready to breed again. :D

It can be a pretty big deal for players that have exciting/expensive matches. XD
