It is a little annoying but I was able to do all mine in 3-4 days, you can go back to the main explore page once they spook to switch horses for the rest of the moves

Maybe it was a breed quest, like breed a silver foal with one P rating? Or a champagne foal with one P rating?

I'm pretty sure the amounts quests pay are random, too.

Pretty sure the rewards aren't random. I have a spreadsheet somewhere of all the quests and the their rewards.
