honestly depends on what you are breeding for, Winterfell. Most EEE broods go for 1k to 2k nowadays, i wouldn't bother with a PEE at this point unless you want to breed her lineage up.

I have always had lower-end jumping saddles because I was a broke teenager and wanted to ride both disciplines and multiple horses. I now have settled on one horse and one discipline. So now I am selling older saddles I don't use in hopes of buying something a little nicer for the next show season. I am just very overwhelmed by all the options and everything I can find right now that I like is over my budget (even used)

This saddle shop has mostly Western, but they have some english tack too :D I love them because none of their saddles are imported, and they make their own tools to measure the saddle trees and whatnot so all the measurements are consistent across different brands. They also have really useful guides on saddle fitting :D

I would find an independent saddle fitter that can look at you and your horse and make recommendations based on that. Saddle fit is SO important and you don't want to mess it up.
I have a CWD and love it, but would personally steer clear of the company. Buy one used if it fits your horse- but the company and their custom saddles are notoriously awful with customer service and giving you a bad fit.
Would also avoid Tad Coffin. Again, lovely comfortable saddles, but any saddle company that claims it can fix kissing spine and your saddle needs a special half-pad to fix is probably full of shit.
Luc Childeric saddles are my personal favorite brand. Schleese is also very reputable.

I will definitely be getting a saddle fitter out but right now finding an independent one is proving to be tricky as I don't live in a "horsey" area. I just wanted to start looking into some brands myself to get an idea of what I should look at spending and what not. I don't know as much about english saddles as I do western so the only brands I can think of are higher-end ones like CWD and Antaries
