There was a petition to allow to mark horses (like activate something) so that this horse is "locked" and cannot be sold, FR or put up for breeding. You have to unlock, do what you want, and can re-lock to be safe this horse doesn't get into the mix when you mass-FR, mass-sell or something.

To remove your gift wrap follow these steps:
Go to Stable > Tackroom > Tack Up > Scroll down and click Select (Equipped) > Select the horse that you want the gift wrap off of and then uncheck the little box under the Equipped box under the horse image.

Hope my instructions weren't confusing >_<
