Sage, I don't know if it exists where you live, but I think the reason we have this degree is that we're a traditionally "horsey nation". There was a big government program some years ago to enhance any indusrty that's horse-related (mainly tourism), and to incentivize the breeding of traditional breeds. A whole bunch of horse focused courses were added to universities and other higher education institutes - like training, herd keeping, breeding, etc.
In this degree I learned not only about "how to" breed horses and keep them happy but also about growing the plants they eat and maintaining all sorts of agricultural idustries.
