yup! usually blue eyes are seen when there's pink skin/white pigment around them, though not always. Sometimes a white pattern that doesn't go over the eyes still causes them to be blue

So I now have a ton of exceptional mares, and next year I'll have 5 (with ET 8 foals)!!! Problem is, I've heard that you have better luck in your first 3 matches, doesn't that mean that any other foals I breed will flop? I want to breed all my mares and potentially use two or three of their embryos at once, but that would go way over the "3 golden breedings". Is this just a myth? This RO I want to breed 4 foals, but I'm worried the last one will be crap.

It's confirmation bias. That means if something happens and you notice it, you also notice it if it happens again, but you might not notice if it doesn't happen. Like saying it rains every Friday the 13th. It might, it might not, but when it does people say, "See, it's Friday the 13th and it's raining. Again."
It persists mainly for occurrences that people feel strongly about. Like wearing your lucky hat means you win. Or the first 3 foals of a year are the best. Or plain foals have better ratings. It's coincidental stuff our human brains like to try to find patterns within.
