Gracie, In real life I assume it is similar to human genetics, parents height and breed play the major role, but in crossing over during meiosis, different genes can be expressed. But I know nothing about horse genetics/breeding :)
Gracie If your asking about in game here is a thing from the guide: Horse Height Captured horses can have heights ranging from 14.3 to 18 hands, sport ponies can captured ranging from 13.2 to 14.2 hands. and they will always be captured at their mature height. When breeding, the foal's mature height will be the average of the parents +/- a random factor. Foals will start out at 10 Hands and each day grow a little bit. It will take about 60 real life days for a foal to reach it's mature height. Height comes into play somewhat with breeding Sport Ponies and Sport Horses to determine which breed the foal is.
If you have Dapple Blend Grain, you can feed it to your horse and their coat will dapple.
The effect will wear off after a few days. One pound of grain will be fed at a time.
If you feed Senior Blend to your senior horse they will have a 10% decreased chance in dying
when the weekly script runs on Monday morning. The effect lasts for one weekly cycle.

You can hire a rider. They will be automatically assigned to your horse. Be sure to visit the Rider's Lounge and pay them.
Set Breeding Requirements for your horse. Enter the minimum rating allowable for breeding. When breeding, Any combo of the entered values and higher will be accepted. Leave blank to set to None.
Edit your horse's remarks. Keep all content PG-13.
Choose a Background for your horse.
Withdraw your horse from it's team. You will lose all team points for this horse. Please discuss this action with the team manager first.
Your horse may show 3 times per week. Shows run daily. Your horse and rider will gain valuable experience from showing. Select a discipline to show in, or scratch from tonight's show.
