If you're using a weight loss marketed food that usually means it's less calories per serving which means they'd need to be fed more. Swapping to a non-weight loss food means same amount or even less would give them more calories
He was on a weight loss diet so I am trying to figure out if he needs to go onto weight management now instead of weight loss and therefore get fed more.
12lbs doesn't sound overweight, that sounds okay especially for a domestic longhair. A look over by a vet or a comparison at home to a chart will be way more accurate but he sounds okay

hummer longhair cats have a pretty generous spectrum of "correct weights" depending on a lot of things. i would say if he seems healthy and happy to you, and the vet has no concerns, then he is the correct weight !
If you have Dapple Blend Grain, you can feed it to your horse and their coat will dapple.
