If you reassign them to train in a new discipline I think it will let you continue training them as long as they aren't Lvl 10 in that discipline as well.

The game will not let you assign riders to Lvl 10 horses as they are schoolmasters and can no longer show or train. You can still use them to provide extra training to your current riders though.
