for those kinds of quests, once you have it in your inventory, go to the inventory and then to the quest hub. I think it kind of updates it so it registers

Choose a Background for your horse.
Withdraw your horse from it's team. You will lose all team points for this horse. Please discuss this action with the team manager first.
Your horse may show 3 times per week. Shows run daily. Your horse and rider will gain valuable experience from showing. Select a discipline to show in, or scratch from tonight's show.
Showing in the special weekly shows doesn't count against your horse's weekly regular show count.
