I have been having difficulty finding backgrounds that fit with my horses in way that I like. I am also just struggling finding nice backgrounds. If anyone has suggestions on how they choose backgrounds that is greatly appreciated.

Honestly? I just use a random Deviantart stock background and edit the heck out of it until it's basically unrecognizable. If the stock is in a suitable background, I will take a shortcut and simply edit the fences out of it if any (The "J" key is my lifeline!) and make it look completely new and original from the stock image I started with. For blurring I will use lens blur on the horizon, the quick select tool on Photoshop is very good for that. A great lighting effect can be found with Picmonkey's effects "Sunglow" and "Radiance." I always use Picmonkey for finishing lighting.
