I didn't even notice the no background option was removed. Maybe try posting it in bugs? Though I would honestly be glad if my horses could keep backgrounds after they pass away as I hate the depressing beige void they suddenly appear in after death. If you have Dapple Blend Grain, you can feed it to your horse and their coat will dapple.
