I remember a show I went to the best Golden I saw was a working dog. Since they are a hunting breed (well, retrieving that is), he had an actual working license for hunting work.

Golden Retrievers are such a large breed that there are a lot of different functions and types. There is supposed to be one breed standard but it's inevitable that if people breed for a certain purpose there are going to be variations. Field/hunting goldens have a thinner, shorter functional coat and more lean and athletic.

Might be working lines vs show lines. Every breed has different types that have developed over time and unfortunately in some breeds the show vs working type can almost be considered a different breed altogether.

Yes there are different lines in lots of breeds! In well bred Goldens you'll see a difference between the show type and the field type, and of course if they're backyard bred then they're not being held to any standard size or shape at all
