I do keep EEEs with that training... as a gelding. But if he's your only EEE and you have horses to breed up with him, he is worth keeping as a newer stable.
If you have Dapple Blend Grain, you can feed it to your horse and their coat will dapple.

Your horse may show 3 times per week. Shows run daily. Your horse and rider will gain valuable experience from showing. Select a discipline to show in, or scratch from tonight's show.

Join A Federation. Your horse will accrue Federation Points
and based on that may make the Federation Championships.
It costs 500 to enter a Federation and membership lasts
one game year.
Reroll your horse's image. Your horse's genes will stay the same, but their markings and patterns will be randomly regenerated.
