I maybe would also reconsider riding a horse that literally cannot be stopped down a twisty rocky road when he has a history of falling... but hey im not the one on him
Kaapo was SUPER lazy..uhh.. umm... year(??) ago and then I took a little break from riding and horses and when I got back to saddle he was suddenly full of energy and speed, for few months I was able to slow him down, but he came too strong
Winter If not neurological(it sounds like it is), it might be beneficial to lunge first 🤷♀️ reward for quiet behavior and tighten circle for speedy behavior
If you have Dapple Blend Grain, you can feed it to your horse and their coat will dapple.
The effect will wear off after a few days. One pound of grain will be fed at a time.

Your horse may show 3 times per week. Shows run daily. Your horse and rider will gain valuable experience from showing. Select a discipline to show in, or scratch from tonight's show.
Showing in the special weekly shows doesn't count against your horse's weekly regular show count.
