Good! We actually feed that exact mineral balance to some of our horses, it's really good.
As for the hay, possibly put the alfalfa in the haynet and the bermuda out of it, so he has easy access to one and has to work for the good stuff. The length of time they spend eating is almost more important than the amount they actually eat, so it's a good idea to try and slow down his eating.
Seems like you're on the right track! :)

I've had this same problem! I've talked to tons and tons of people, and the most common suggestions are Purina Super Sport, and Special K!

I recently brought home a rescue that was underweight and put her on Special K, it helped her a lot!

This is Maple
Edit:
Maple will not be ridden until he is back in good health. Right now we go for walks and sometimes for a trot in the round pen.

I think 3 days ago? (all the days are smushing together lately lol)
Maple got a bale of hay in his hay net which he's been munching on. He also gets 1 flake of alfalfa (morning and night)

Just an update for the super sport stuff, I've had my gelding on it for a month + now, and I can confidently say it really has helped put weight on! I highly recommend it
