I captured a horse just now and in his profile in says he's a grey Warmblood......but he isn't grey.....

In real life, a grey foal is born with a base color, and it takes a while for the horse to fully grey out.
Like this:

The same happens here! Your foal will grey out as he ages. :D Watch him when he turns 3 ;)

He is totally grey. All the white that's all over his body? That is him starting to turn grey. When horses are born they dont pop out grey, they start out their base color (chestnut in your horses case), then over time slowly turn grey.
The famous lipizzanners are the perfect example. They are all born black or bay and then turn white (or really grey) as they age.
In hee the change is more sudden than it is in el. But once the horse turns 3 it will have its final grey coat.

The Lipizzanners are a huge example I always forget about. Jeri is right too, about his current coat. He is chestnut based, but with all those white hairs, he is definitely grey :D
