Lol the irony. Ive not crafted a capture pass or seen the quest for it in ages. Bulk crafted a load earlier to save money on a capture quest, then this afternoon get the quest twice and have to buy ingredients for it 🤷‍♀️💀

Yes, horses can be set to not rate. Its under the Miscellaneous barn view- if any are set to "No" then you can just change it to "Yes" and they should show up

Bravery is an aspect of rating, just like AD and SD are. With it you can go to services > explore and use trained bravery horses to explore the wilds of HEE and find maps and decor. It's not important unless you want it to be, but some players focus on breeding for bravery.
