Her coat's really complex so if you aren't up for the challenge, I understand and I can switch out for another horse instead, no problem. Otherwise, I'd say just do whatever you'd like with it. Maybe some just normal mountains or forest scenery, something calm that would make her coat really stick out, I'd prefer the mane to be a bit longer than the pulled look that show jumpers have, maybe a bit messy too, as if she's wild or something, long forelock and long tail as well.
