Hi!

I've been struggling to produce decent horses and I've been playing this game for over a year. Usually I get a few decent horses every game year but lately I've only been getting one or two good horses. Would it be possible for someone to take a look at my barns and tell me what I am doing wrong or give me advice that could help me better my stables.

It doesn't look terrible, really.
I know you are trying to focus on breeding, but you might want to think about having a barn full of geldings/show horses to earn you money. They will help pay for better quality broods/straws/LCs which leads to better foals.
Some breeds PEP combos are not great at all because of how many there are and how weak they have become. Sport Horse is a very common breed so for breeding I would use only EE combo horses (preferably only EEE stallions).
Focus on quality over quantity. If you spend 100k on a good match and get a EEE foal, its better than spending 100k on 10 matches and getting a hodgepodge of E combos or less.
I don't personally do blind breedings or breeding without matching, but it works for some. If you match, match as best as you can and if you have the resources use breeding items.

Thanks for the advice. Matching is something I'm confused about. Does one match according to training, strengths and weaknesses or rating?

You match according to strengths & weaknesses.
For example, if you have a mare weak in Dressage traits (Movement, Intelligence, Strength) then you want to look for a stud that is strong in those traits. I usually focus on Week 4 and 8 to see strengths and the other weeks to evaluate weaknesses.

I ONLY breed to EEE studs, preferably LB studs.

Helvetti has a Premium in Cross Country so I know she needs a stud strong in Cross Country, especially since she was only down in Cross Country traits in Week 4. She is strong in 2/3 Dressage traits and is also stong in Scope.

ABLB stallion.
Didymus is weak in Scope, which Helvetti makes up for, and he was up on the rest of the traits in Week 4. He is especially strong in Speed, which Helvetti needs.

Their first foal together was an EEE that was weak in 2/3 Cross Country traits without any breeding items.
They were bred again this year WITH a Cross County medallion which again produced an EEE. I am hoping this Cross Country medallion helped correct Helvetti's cross country weaknesses even more.

Iff this stud was down in any Cross Country traits in Week 4 and Week 8 then I would not have bred Helvetti to him.

Training/strengths & weaknesses.
Where some go wrong, is forgetting that each discipline has 3 parts.
For a horse to be strong in a discipline, all 3 traits have to high bars.
