What exactly does this mean, I'm new and I feel not so smart when asking but I am curious. If I had to guess I'd say it was a breed rating type thing, but I wanna know if it is something else.

Those are breed ratings. S/S/S means that the horse is Superb in Dressage, Superb in Cross country, and Superb in jumping. E stands for elite. P stands for Premium. A stands for Average. The order for these ratings, from worst to best is Average, Superb, Premium, and Elite.
So for example, if a horse is rated P/E/P, it's a horse that is Premium in dressage, Elite in cross country, and Premium in jumping. Hope this helps and welcome to Horse Eden!

Each horse will have a rating for dressage, cross country and jumping.
The ratings are, best to worst:
Elite Premium Superb Average Sub-Par
So EEE means the horse is Elite in all three discplines.
