Hey!
So, I've been looking around for tutorials on how to make water splashes on iBisPaintX, but I haven't found anything.
Could someone please help?
I would also like some help on color changes on iBisPaint.

I don't have experience with iBisPaint but I hope this will help a little.
I use water splash stock from DeviantArt as well but I often end up painting over part or all of it. I use it as more of a base for my splashes.
As far as color changes, each and every color change is different. In general I tend to desaturate, paint over the horse with the base color and change the layer setting to "Color" or a similar setting that will change the hue of the horse to the desired color. I then go in with a darker color of the base color I chose to paint in shadows - for this layer I choose the setting "Multiply" and then play with the opacity until I'm happy with how it looks. I then go in with a lighter version of the base color to do highlights - for this layer I choose the "Screen" setting and again play with opacity.
For white horses, I first paint the horse with a white and then set the setting the "Color" and decrease opacity until the horse is a grayer version of it's original color. I then use the HSL tool and increase the percentage of the luminosity shift. For this layer, I often also select the "Screen" setting. If the white is not yet how I want it (often happens on really dark horses), I will go in with a curves tool and pull the line slowly towards the top left until the desired shade. Sometimes I put this layer on the "Screen" setting and lower opacity.
For changing horses to black, I go through the same process as above except leave out the HSL layer and instead of pulling top left on the Curves layer, pull down right.
I hope this helps! If you need any clarification, please feel free to message me and I can send you some picture examples. :)
