Does anyone have some yummy low-cost vegetarian meals? Specifically with beans, although anything that is substantial enough to serve as a meal is good!

This isn't really a recipe but cooked kale is so good! You just pour a little olive oil and some salt and pepper and cooked it on the stove until it is soft. It is really good over rice!

Start with a Cassarole dish. Fill the bottom with cheese (optional) and mashed potatoes, doesn't have to be thick, just enough to keep everything together when you serve it. Throw in beans, corn, peas, whatever you want pretty much. Top with batter of bisquik (I think its 2 cups mix, 1.5 cups milk and 1 egg?) or a pancake type batter and bake for 45-60 minutes at 350 F. I heard of this a Cheeseburger Pie recipe, but you can turn it into whatever you want.
