Have not looked to see if this has been posted but it is quick and easy lol for simple people like me XD

Quick N Easy Peanut Butter Cookies

Ingredients:


1 cup peanut butter
1 egg
1 cup white OR brown sugar

Directions:

1.Add all ingredients together and mix thoroughly.
2. Place rounded spoonfuls (1-2 inch in diameter) onto greased cookie sheet
3. Take a fork and make flatten them a little then use the fork to make a crisscross pattern by running the fork over one way diagonally then the other (or something like that LOL)
4. Place in oven at 350 degrees and bake 8-10 minutes or until outside edge is a slight golden brown. Easy to over cook these they harden relatively fast and burn lol
5. Let cookies cool off to minimum burn damaging temperatures and enjoy! A glass of milk goes quite well with them!

I normally cook from scratch, but on occasion I take shortcuts. One of my FAVORITE sides is "Broccoli Cornbread".

You need;

2 Boxes Jiffy Cornbread mix
2 sticks of butter, melted
4 eggs, beaten
1 cup Cottage cheese
1 cup diced onion
1 cup frozen broccoli, thawed, drained, and chopped
1 tsp black pepper
2 tsp Herbs De Provence (or thyme, basil, whatever you like)
2 tsp garlic powder

Mix all dry ingredients
Mix all wet ingredients and add broccoli.

Combine the two

Pour into a sprayed 9x13 dish and bake at 400° for 20-25 minutes until lightly browned and a toothpick inserted into the center comes out clean.

Let cool at least 10 minutes, cut up and devour!

I serve it with Beef Stew or Roasted Chicken and roasted root vegetables.

It's easy and oh so good :)

I hope it tastes as good as it smelt while I was preparing it 😄

Had to use canola oil instead and normal old brown color potatoes. Thinking of adding carrots on the side as me and my mom love cooked carrots ☺

Some of my poor-man recipes that I use when we struggle financially, these are great tasting and pretty cheap to make


Spicy Deviled Egg Sammiches
-2 eggs, boiled and halved
-2 pieces of slightly toasted white bread
-1 hot chili pepper (can increase if you like it super spicy)
-1 cup mayo

*Blend Mayo and chili pepper together till creamy
*Butter both sides with sauce place and place eggs on the bread
Eat your delicious creation and go back for seconds and thirds..

Cake Mix Pancakes

Mix together 1 box of cake mix, and add 1 egg.
Mix in milk until slightly runny

Butter Skillet and make your pancakes as big as you want them, rule of
thumb is that when you start to see a lot of bubbles, flip

Enjoy!

My Gramma's Potato Bake

Slice up a dozen potatos and place in a oven pan
Slice up a onion and do the same
Mix together with olive oil and bake at 175 F till golden brown and soft (stick a fork in a potato if it doesn't go clean through then it needs to go longer)
Top with salt

Serve with any type of meat (pairs good with chicken) or eat by themselves

Ingredients:


    <li class="ingredient" itemprop="ingredients">125g unsalted butter<li class="ingredient" itemprop="ingredients">¼ cup honey<li class="ingredient" itemprop="ingredients">½ cup white sugar<li class="ingredient" itemprop="ingredients">1 cup Milo<li class="ingredient" itemprop="ingredients">4 cups crispy rice cereal


Method:


Start by boiling sugar, honey & butter together for 3 minutes.

  • Then in a large bowl mix in milo & rice bubbles, making sure it is combined well.

  • Grease a baking pan with butter roughly 35x20cm (13x7inch) and place the mixture in the tray.

  • Pressing down with the back of a spoon make sure the mixture is even in the pan.

  • </ol>
    Whilst the slice is still warm cut into desire shape & size then place in the fridge to set.

    Time taken to set depends on your consistency, thickness & coolness of your fridge! In a snap, putting them in the freezer for an hour or two works well too!

    Cutting into bars makes this makes a great lunchbox snack for the kiddos, or cut into squares as an entertainer at a party.

    Eve's epic mac n cheese for single, busy, or lazy people. ;)

    Ingredients

    1 box of mac n cheese. Whatever brand you like.
    1 packet of Sargento sharp chedder cheese slices. I choose this brand because it is a real cheese, and a cooking cheese. If you try to snack on it, or use it for sandwiches, you wont like it. Its a hard cheese and needs to be melted to enjoy.

    Instructions.

    1) Cook the mac n cheese according to the directions on the box.
    2) Put a serving size on your plate.
    3) Put 1 slice of the Sargento cheese on top of your mac, and nuke in microwave until melted.

    4) Eat. It will be the best thing you ever tasted. If you are a cheese fan.

    LOVE. I realize this is simplistic. But its so amazing it needs to be said. You will never eat mac n cheese a normal way again.

    Breakfast Chilaquiles
    Preparation Time: 20mins Cook time: 35mins
    Total Time: 55mins Yield: 4
    Ingredients
    · 4 Roma tomatoes
    · 2 tomatillos husk removed and washed
    · 4 guajillo peppers stem and seeds removed
    · 6-8 chiles de árbol stems removed
    · 1/4 white onion
    · 1-2 cloves of garlic
    · 1 cup cooking water from tomatoes
    · salt to taste
    · 4-5 tablespoons Grapeseed or olive oil
    · 1 medium Russet potato peeled and diced
    · salt and pepper to taste
    · 8 ounces Mexican-style chorizo
    · 16 corn tortillas cut each tortilla into 6 wedges
    · 2 cups canola oil
    · 1 cup crumbled queso fresco
    · 1 cup Mexican crema
    · 4 large eggs cooked sunny side up
    · 1/3 cup thin sliced fresh or pickled onions for garnish
    · 1-2 thin sliced jalapeño or Fresno peppers for garnish
    Directions
    1. <span style="white-space:pre"> In a saucepan, add the tomatoes, tomatillos, guajillos, chile de arbol, onion and garlic. Cover with water and bring to a boil. Reduce heat and simmer for 10 minutes. Using a slotted spoon, transfer the salsa ingredients to the blender. Add 1 cup of cooking water and salt to taste. Blend on high for 1 minute. Taste for salt and blend for another 30-45 seconds. Set aside.
    2. <span style="white-space:pre"> While the salsa ingredients are cooking, in skillet, preheat 2 tablespoons of oil to medium heat. Add the diced potatoes and spread out evenly. Season lightly with salt and pepper. Cover skillet with lid and continue cooking the potatoes for 20 minutes, stirring now and then. Once potatoes are fork tender, move them to one side of the skillet. On the other side, add the chorizo and cook for 6-7 minutes, crumbling with spoon as it cooks. Mix the potatoes and chorizo together. Cover and remove from heat.
    3. <span style="white-space:pre"> In another saucepan, preheat the 2 cups of oil to medium heat for 7-10 minutes or until temperature reaches 350ºF. Fry the tortilla wedges in batches until very crispy and light golden brown in color. Transfer to a plate or baking sheet lined with paper towels. Season lightly with salt as they come out of the hot oil.
    4. <span style="white-space:pre"> In a skillet, preheat 2 tablespoons of oil to medium heat for a few minutes. Pour in the salsa from the blender. Reduce heat and continue simmering for 8-10 minutes. Reserve 1/2-3/4 cup of this salsa in a bowl.
    5. To the remaining salsa, fold in the crispy chips until evenly coated. Divide the chilaquiles onto four plates. Top with chorizo and potatoes. Garnish with queso fresco, crema, onions, sliced jalapeños and egg. Spoon on a little of the reserved salsa onto egg. Serve right away with a side of your favorite refried beans

    My fiance is Hispanic and this is one of the recipes his mom is teaching me to cook, so it's kinda spicy.

    Here's an easy Chicken Alfredo recipe I found!

    Chicken Alfredo
    Preparation Time: 10 mins Cook time: 20 mins
    Total time: 30 mins Yield: 4
    Ingredients
    · 2 tbsp. extra-virgin olive oil
    · 2 boneless skinless chicken breasts (or buy precooked strip chicken)
    · Kosher salt
    · Freshly ground black pepper
    · 1 1/2 c. whole milk
    · 1 1/2 c. low-sodium chicken broth
    · 2 cloves garlic minced
    · 8 oz. fettuccini
    · 1 c. freshly grated Parmesan
    · Freshly chopped parsley, for garnish
    Directions
    1. <span style="white-space:pre"> In a large skillet over medium-high heat, heat oil. Add chicken and season with salt and pepper. Cook until golden and cooked through, 8 minutes per side. Let rest 10 minutes, then slice.
    2. <span style="white-space:pre"> Add milk, broth, and garlic to skillet. Season with salt and pepper and bring to a simmer. Add fettuccine, stirring frequently for about 3 minutes. Let cook until al dente, 8 minutes more.
    3. <span style="white-space:pre"> Stir in heavy cream and Parmesan until combined. Simmer until sauce thickens.
    4. <span style="white-space:pre"> Remove from heat and stir in sliced chicken. Garnish with parsley.

    <div align="center">First, pour the cream into a bowl and add the lemon zest, leave it to infuse for a while.

    Jack Daniel's Pecan Pie:
    1 cup granulated sugar
    4 tbsp melted butter
    1/2 cup dark corn syrup
    3 large eggs, beaten
    1 1/2 cup Pecan halves
    2 1/2 tbsp Jack Daniel's
    1 9 in. pie shell, unbaked
    1 cookie sheet
    Steps:
    Preheat Oven to 375
    Mix Sugar, melted butter and Jack Daniel's together
    Add Corn Syrup, beaten eggs, and pecans
    Place filling into Pie Crust
    Bake at 375 for 10 mins and then 350 for 25 mins. My oven was very quick so I pulled it out at 15 mins.
