The default is eventing riders - if you've changed your horse to a specialty, then when you hire a new rider they'll be in that specialty. So you either need to create a new rider for E, or change your horse to E, hire rider, and then change back to specialty. :D

It's why horses show eventing above their levels for dressage, jumping & cross country - it's their overall score between the three events :)
