I have considered rottweilers but I have found that they are mostly banned around where I live. While my apartment doesnt have an issue with it, I would have a really hard time finding an apartment with a rottweiler.
As far as bitework training goes, I am looking at pretrained dogs as well as ones that I could work myself but already trained dogs are WAY out of my price range so it will take time but I would train the dog myself. I kind of like what one training 'company' has done which is where their dogs are very friendly but have a sort of "on switch" so the dog goes into a mode of protection almost immediately.
The non lethal weapon thing is a great idea. I will have to look into it. The TKD probably wouldn't do much at this point since I am a small person (I am 5ft 4in) and while I did some ju-jitsu work and boxing, it isnt something I did a lot of. It definitely was terrifying and I have found a therapist through a friend. I am just trying to figure out what I should be doing to stay safe that would be more effective that just carrying pepper spray around my neck since obvously it doesnt work as a deterrant.

find someone who trains working line of dogs like gds mals dobermans?

I was thinking about this too but the problem is that I would likely have to send the dog off since i have been unable to find an in-state place. I found a place out of state however that does it and I really like their methods and results but it is out of state and they charge about $5000 for 21 days and you have to pay for an evaluation first which would require the dog go through basic obedience training (price varies but they do obedience training for a few hundred dollars). They also dont guarantee how far your dog will get in those 21 days. And I would want a "finished" dog. So I have been looking into other places but I dont know how I feel about buying a pup/dog, sending it off for training and hoping they take care of him/her and hope i get my money's worth of training and then get the dog back or possibly have to go through more training.

If bite training a dog is so expensive, would just walking around with a 'scary' dog like a doberman or GSD work? I would still carry a non-lethal weapon though.

And that is the main question I have as well. I have bite trained a dog before, I know it takes a lot of time and work and money and dedication and discipline (and the list goes on). I know that when I was bite training my first dog, she did very well with it although it took several years to do her obedience training because I didn't start her early enough and she was just very stubborn. I was also learning how to properly train dogs at the time. And so while I could do it and I can do it, I would have to purchase a dog that is meant for that kind of work and who is mentally and physically able to do it. I could go to an excellent breeder for working (bite) dogs but get a dog that doesnt have the mentality for bite work. It is a huge risk factor. I do know there are a lot of good breeders who will test their dogs first and then say "ok this one could be a working dog for (blank) work." But it is only a possibility or prediction.
I would be fine with having a "scary" dog but as you said, would it work as a deterrent? Could a dog like a doberman be naturally protective without bite training - since that is what they were bred for initially - and be willing to protect me if I needed them to without training or would that make the dog "dangerous" (by state standards since it isnt a trained thing)? I just have a lot of questions and my primary consideration is the dog and how the dog would do. As in, would the dog be happy? Would I be doinng what is best for the dog if I decided to get one?

that sounds like a really good deal or some kind of a scam to be honest... but i guess it depends on the cost of the pup(s).

I have an idea on a dog breed that is somwhat intimidating, and protective if it feels threatened. English Mastiffs are great, they are big dogs, but they look, and sound intimidating, I knew someone once who was about to be attacked and the dog instincivly tackled the person until help arrived, the dog had no training, but instictivly did it. If that helps at all :)

I wonder how much Jello would know about this topic. Is it bite work or just obedience she has dogs in?

WolfDancer, I thought about English mastiff dogs. My grandma and grandpa have one and have had several before that. The problem with them is that the breed is declining in health. Every dog my grandparents have had except for one that passed in 1998 has had health issues. The one before their latest dog (both several thousand dollar dogs) was put down at 2 because of health issues. That's a huge reason I've looked into cane Corsos which are a mastiff breed with less health issues.
Tranquility Jello has dogs in both obedience and bite work I think...

I actually think Jello has Dutch shepherds rather than Mals too. But I'm not sure.
