Carrot Cake Recipe! This was a massive hit with my family and it was a large cake.Recipe: 2 cups all-purpose flour 2 cups sugar 2 teaspoons ground cinnamon 1 teaspoon baking soda 1/2 teaspoon salt 3 large eggs, room temperature 1-1/2 cups canola oil 2 cups finely grated carrots 1 teaspoon vanilla extract 1 cup well-drained crushed pineapple 1 cup sweetened shredded coconut 1 cup chopped nuts CREAM CHEESE FROSTING: 6 ounces cream cheese, softened 6 tablespoons butter, softened 3 cups confectioners' sugar 1 teaspoon vanilla extract Additional chopped nuts Instructions: In a large bowl, combine the flour, sugar, cinnamon, baking soda and salt. Add the eggs, oil, carrots and vanilla; beat until combined. Stir in pineapple, coconut and nuts. Pour into a greased 13x9-in. baking pan. Bake at 350° for 50-60 minutes or until a toothpick inserted in the center comes out clean. For frosting, beat cream cheese and butter in a small bowl until fluffy. Add the confectioners' sugar and vanilla; beat until smooth. Frost cake. Sprinkle with additional nuts. Store in the refrigerator. I had to use a hand mixer for both the cake and frosting and I did not use a food processor to make the carrots smaller and honestly it was better that way.

So excited/nervous for Friday. I have a meal planed for my mom and I but its not how I normally cook it.
Normaly I let 2 pieces of wild Alaskan salmon marinate in a blackberry lemon sauce for 1 day then I cook each salmon for 30sec each side in a skillet covered or longer if needed.
But Friday I'll not be using a skillet on a stove, i'll be cooking it on the BBQ with random vegetables draped over the top and cooked till it is crispy and done.
I made my mom pick her vegetables and I picked mine
Mom went with Onion Zucchini
I wanted to try a few more Onion Asparagus Potato
I'll post a update latter telling how it turned out originally I wanted to cook it on a wood plank but could not find any :/

Iced strawberry! its so yummy! this can also be made with any of your favourit topping too! :) Ingredients: vanila ice cream milk strawberry topping/ or your favourite flaoured topping and whiped cream and coco powder if disred Methord: in a large milkshake cup pour topping in the bottom and on the sides of the cup . pour milk in the cup then mix it togther and add one scoop of icream and pour wipped cream on top add a straw and spoon enjoy.
