Eve, i feel you there. we have been pretty lucky here. Central NSW. Only the last 2 weeks have been super hot.
We are lucky enough to live on a property with lots of dams. The horses swim daily. Nice big shady trees for our chooks.

We do get some colder temperatures and some snow, but nothing too catastrophic and they are really good at getting the roads cleared.
